Frozen Honey, Blueberry, Coconut Milk Dessert
For those that can’t have dairy but like to have a good frozen dessert like ice cream, this is a great alternative. Keep in mind also that we usually have honey in stock that can help you buy local.
2 cans coconut milk, chilled (just stick the can in the fridge)
1 ½ cups washed blueberries
½ cup of honey
Makes about 1 ½ quarts
Busy Bee Berry Sauce
4 cups blueberries or blackberries
2/3 cup sugar
2 Tbsp flour
Combine ingredients in a microwavable bowl. Stir lightly Microwave 10-11 minutes, stirring at 3-4 minute intervals. This recipe works equally well with fresh or frozen berries. Our family uses it on waffles, ice cream and in our pie and cobble recipes. It is also the key recipe for our yummy fruit pizza.
Blueberry Jam from Ball
Crush blueberries by using a potato masher.
You will need: 4 1/2 cups crushed blueberries
1/4 cup lemon juice
7 cups sugar
2 3oz pouch ball liquid fruit pectin
Combine prepared fruit with lemon juice and sugar in a 6 – 8 quart saucepan. Add up to 1/2 tsp butter or margarine to reduce foaming, if desired. Bring mixture to a full rolling boil that cannot be stirred down, over high heat stirring frequently.
Add Ball Liquid Pectin, immediately squeezing entire contents from pouch(es). Continue hard boil for 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.
Fill and seal your jars!
2 pie crust = 1 pie
2/3 cup crisco
1/4 tsp (rounded) salt
2 cups flour
1/3 cup ice water
Mix the flour and salt together and then cut the Crisco in with a pasty blender or by the mixer. As you mix gradually add 1/3 cup ice water. Make into a ball and roll out for pie crust.
Berry Lady’s fruit pizza
Makes 12 servings
1 1/2 cups flour
3/4 cup butter, softened
1/3 cup powdered sugar
Combine in mixer until smooth. Press into standard size pizza pan. Bake at 400 degrees for 10-12 minutes or until lightly browned. Cool.
8 oz. cube of cream cheese
1/4 cup powdered sugar
1/2 of a regular size Cool Whip container
Juice of 1/2 lemon
Blend in mixer and spread on cooled crust.
4 cups of blackberries, blueberries or boysenberries
2/3 cup sugar
2 tablespoons flour
Combine ingredients in a glass bowl and cover with plastic wrap. Microwave for 9-11 minutes, stirring at 3 minute intervals. Cool. Spread over cream cheese filling.
Cooking tips: You can prepare the ingredients the night before, refrigerate the filling and sauce, and assemble it before serving.
Daisy’s Berry vinaigrette from Rancho Notso Grande
2 cups of mixed berries
1/2 cup of sugar
1/3 cup of red wine vinegar
4 teaspoons of cabernet sauvignon
Pinch of salt and pepper
Blend well and strain seeds. Pour over your favorite salad. Refrigerate unused portion.
