Busy Bee Berry Sauce
4 cups blueberries or blackberries
2/3 cup sugar
2 Tbsp flour
Combine ingredients in a microwavable bowl. Stir lightly Microwave 10-11 minutes, stirring at 3-4 minute intervals. This recipe works equally well with fresh or frozen berries. Our family uses it on waffles, ice cream and in our pie and cobble recipes. It is also the key recipe for our yummy fruit pizza.
Blueberry Jam from Ball
Crush blueberries by using a potato masher.
You will need: 4 1/2 cups crushed blueberries
1/4 cup lemon juice
7 cups sugar
2 3oz pouch ball liquid fruit pectin
Combine prepared fruit with lemon juice and sugar in a 6 – 8 quart saucepan. Add up to 1/2 tsp butter or margarine to reduce foaming, if desired. Bring mixture to a full rolling boil that cannot be stirred down, over high heat stirring frequently.
Add Ball Liquid Pectin, immediately squeezing entire contents from pouch(es). Continue hard boil for 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.
Fill and seal your jars!
Pie Crust
2 pie crust = 1 pie
2/3 cup crisco
1/4 tsp (rounded) salt
2 cups flour
1/3 cup ice water
Mix the flour and salt together and then cut the Crisco in with a pasty blender or by the mixer. As you mix gradually add 1/3 cup ice water. Make into a ball and roll out for pie crust.
